Kids Kooking Korner: Breakfast for Dinner - Waffles & Eggs

As I continue teaching my kids to cook, I realized waffles and eggs are always a favourite in our family, and fairly easy to cook for kids. So why not breakfast for dinner?


You will need:
- Instant pancake/waffle mix
- Sugar/cinnamon (optional)
- Water
- Cooking spray
- 2 eggs per person
- 2 tbsp. milk
- Seasoning salt or salt and pepper
- Waffle iron
- Wisk
- Large bowl
- Small bowl
- Medium frying pan
- Spatula

A waffle Iron is a kid friendly appliance; any one will do. Size or shape is not important. (You can also use the batter to make pancakes in a frying pan on med-high heat. Just wait for bubbles to form on top and then flip the pancake and cook another minute). Purchase any pancake/waffle mix, for kids the “just add water” one is the best. Of course, you can make your own waffle mix from scratch in a snap! It really is quite easy. Plug in the waffle maker. In a large bowl, pour the mix in and add water to the mix using a whisk to stir. Do not add too much, keeping the batter fairly thick. I also add 2 tbsp. of sugar to sweeten it just a touch. It really does taste better! You can also add cinnamon and vanilla to really give it that punch of extra flavour!

Spray the Iron with cooking spray each time or it will stick! Use a ladle to pour the mix on to the waffle iron until the entire surface is covered, then close the lid. It takes 4 to 6 minutes, depending on your waffle maker. Open the lid and peel away with a fork and place on plate. Voila! Kids really enjoy cooking with this appliance.

Now for the eggs! Let’s scramble (very kid friendly). Use a medium frying pan and add a small amount of oil/butter to the pan. Crack two eggs into bowl and add a splash of milk. Wisk away until nicely blended. We like to add a dash of seasoning salt, or if you prefer salt and pepper or no seasoning. Heat the pan to a fairly hot temperature and pour in the whisked egg/milk mixture, be prepared to fluff and fold the eggs with a spatula scraper at a fast rate as eggs cook very quickly.

I actually remove from the heat all together for the final minute of cooking. Plate the eggs and the waffles and enjoy with fruit on top or plain jane style. Happy August!!!
